This is an original dessert for your little gourmands. Cookies with corn flour and blond grapes, called zaeti. A typical recipe from Venice.
For 4 people
- 120 g corn flour (or very fine polenta)
- 110 g of wheat flour (T55)
- 60 g of butter
- 60 g caster sugar
- 50 g of fluffy blond grapes
- 1 egg
- 2 pinches of baking powder
- the zest of a lemon
- possibly a veil of icing sugar to serve
In a salad bowl, combine the 2 kinds of flour. Add the finely chopped lemon zest, a pinch of salt and the yeast. In a bowl, beat the egg with the powdered sugar. Pour into the bowl. Stir in the diced butter and the blond grapes, mix until smooth.
Form a pudding 5 cm in diameter, cover it with cling film and put it in the refrigerator for 30 minutes.
Preheat the oven to 180 ° C. Slice the pudding to form about 24 round cookies. Align the zaeti obtained on a plate lined with baking paper, bake for 10 min.
Let the zaeti cool on a rack.
Corn flour does not contain gluten, it complements wheat flour well and brings a beautiful golden color.
