Beetroot and tapioca soup (Emilie)


My 15 month old son refuses all pieces! To offer him different textures, other than semolina and floraline, I use tapioca or pearls from Japan; I propose to Ewan a good soup of beets. A real treat for my little gourmet.

Ingredients:

  • 2 cooked beets, 1 small onion, 2 tbsp. of tapioca and some parsley leaves.

Preparation:

Brown the diced beets with a small chopped onion over low heat for 6/7 minutes. Apart, cook the tapioca for 7 min in a boiling liquid (water or milk or broth). Mix the beetroot with the parsley and add the tapioca.
